  • 1 teaspoon onion powder
  • ½ teaspoon smoked paprika
  • Salt and pepper, to taste

For serving:

  • 8 small corn or flour tortillas
  • 1 cup shredded lettuce or cabbage
  • ½ cup diced red onion
  • 1 avocado, sliced
  • 1 cup cherry tomatoes, halved or salsa
  • ½ cup crumbled cotija or feta cheese
  • Fresh cilantro, chopped
  • Lime wedges

Instructions

  1. Marinate the chicken:
    In a bowl or bag, mix olive oil, lime juice, and all spices. Add chicken and toss to coat evenly. Marinate in the fridge for at least 30 minutes (up to 8 hours).
  2. Preheat the grill:
    Heat your grill or grill pan to medium-high heat (around 400–425°F). Lightly oil the grates.
  3. Grill the chicken:
    Place marinated chicken on the grill. Cook for 5–7 minutes per side, or until internal temperature reaches 165°F. Let rest for 5 minutes.
  4. Warm the tortillas:
    While chicken rests, warm tortillas on the grill for about 30 seconds per side or until slightly charred.
  5. Slice and assemble:
    Slice chicken into strips. Fill each tortilla with a layer of lettuce or cabbage, followed by grilled chicken, toppings, and a squeeze of lime.
  6. Serve:
    Serve immediately with lime wedges and extra toppings on the side.
