  • ½ teaspoon salt

  • 1 large head of broccoli, cut into florets
  • 2 tablespoons olive oil
  • ½ teaspoon garlic powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

For the Creamy Garlic Sauce:

  • ½ cup (120g) Greek yogurt or sour cream
  • 2 tablespoons mayonnaise
  • 1 tablespoon lemon juice
  • 2 cloves garlic, minced
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 teaspoon honey (optional, for balance)

For Serving (Optional):

  • Cooked rice, quinoa, or cauliflower rice
  • Sliced avocado or cherry tomatoes
  • Fresh parsley or sesame seeds for garnish

Instructions

Step 1: Marinate the Chicken

  1. In a bowl, whisk together olive oil, honey, Dijon mustard, lemon juice, garlic powder, paprika, salt, and pepper.
  2. Add the chicken thighs or breasts, coating them well.
  3. Cover and refrigerate for at least 30 minutes (or up to 8 hours for more flavor).

Step 2: Roast the Broccoli

  1. Preheat oven to 400°F (200°C).
  2. Toss broccoli florets with olive oil, garlic powder, salt, and black pepper.
  3. Spread on a baking sheet and roast for 15-20 minutes, flipping halfway through, until golden and slightly crispy.
