For the Cake:
- 1 box (15.25 oz or 432 g) lemon cake mix
- 1 package (3 oz or 85 g) lime-flavored gelatin (Jello)
- 4 large eggs
- ¾ cup (180 ml) vegetable oil
- ¾ cup (180 ml) water
- ¼ cup (60 ml) lime juice
- Optional: a few drops of green food coloring
For the Glaze:
- 2 cups (250 g) powdered sugar
- ¼ cup (60 ml) lime juice
- 1 tablespoon (15 g) lime zest
Instructions
- Preheat the Oven
Set your oven to 350°F (175°C). Grease and flour a 9×13-inch (23×33 cm) baking pan or line it with parchment paper for easy removal. - Mix the Cake Batter
In a large mixing bowl, combine the lemon cake mix and lime gelatin powder. Add the eggs, oil, water, lime juice, and food coloring if using. Mix with a hand mixer or stand mixer on medium speed for about 2 minutes until smooth and well combined. - Bake the Cake
Pour the batter into the prepared pan and spread evenly. Bake for 30–35 minutes or until a toothpick inserted in the center comes out clean. The cake will puff slightly and turn a beautiful green. - Prepare the Glaze
While the cake is baking, whisk together powdered sugar, lime juice, and zest in a bowl until smooth. - Glaze the Cake While Warm
As soon as the cake comes out of the oven, poke small holes across the top using a fork or skewer. Slowly pour the glaze over the warm cake so it soaks in evenly. Let the cake cool completely before slicing.
