- 1 lb ground lamb (or half lamb, half beef)
- 1 lb ground beef or chicken (optional mix-in)
- 1 small onion, finely grated
- 3 garlic cloves, minced
- 1 tsp ground cumin
- 1 tsp dried oregano
- 1 tsp ground coriander
- 1 tsp smoked paprika
- 1/2 tsp cinnamon (optional)
- 1 tsp kosher salt
- 1/2 tsp black pepper
- 1/2 cup breadcrumbs or almond flour
- 1 large egg
- 2 tbsp fresh parsley, chopped
- 2 tbsp fresh dill, chopped
- Juice of 1/2 lemon
Optional for serving: tzatziki sauce, pita bread, cucumber salad, roasted potatoes
Instructions
- Preheat oven: Set to 375°F (190°C). Grease or line a 9×5 loaf pan.
- Mix ingredients: In a large bowl, combine ground meat, onion, garlic, spices, breadcrumbs, egg, parsley, dill, and lemon juice. Mix until incorporated, but don’t overwork.
- Shape & bake: Press mixture into loaf pan. Bake uncovered 45–55 minutes, until internal temp reaches 160°F (lamb/beef) or 165°F (chicken).
- Rest: Let the loaf rest 10 minutes before slicing to retain juices.
- Serve: Slice and enjoy with tzatziki, pita, or classic Greek sides.
