Instructions
- Roast the beets: Preheat your oven to 400°F (200°C). Wash and trim the beets, then wrap them individually in aluminum foil. Roast for 45-60 minutes, or until fork-tender. Let them cool, peel off the skin, and chop into bite-sized cubes.
- Prepare the salad vegetables: While the beets are cooling, thinly slice the red onion and chop the cucumber. Place these in a large salad bowl.
