Instructions

  1. Cook the tortellini: Bring a pot of salted water to a boil. Cook cheese tortellini according to package directions, then drain and set aside.
  2. Sear the steak: Heat olive oil in a large skillet over medium-high heat. Add sliced sirloin, season with salt and pepper, and cook until browned on all sides (3–4 minutes). Remove and set aside.
  3. Sauté vegetables: In the same skillet, melt butter and add onion, bell pepper, mushrooms, and garlic. Cook 5–6 minutes until softened.
  4. Make the cheese sauce: Reduce heat to medium-low. Pour in heavy cream, scraping up browned bits. Gradually add mozzarella, provolone, and half the Parmesan, stirring until smooth and creamy.
