Instructions
- Preheat oven: Set oven to 350°F (175°C). Grease and line an 8×8 or 9×9-inch pan.
- Mix wet ingredients: In a large bowl, whisk eggs, sugar, oil, and vanilla until smooth.
- Combine dry ingredients: In another bowl, whisk flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
- Make batter: Stir dry mixture into wet until just combined. Fold in chopped apples.
- Add topping: Spread batter in prepared pan. Mix cinnamon and sugar, then sprinkle evenly over top.
- Bake: Bake 40–45 minutes or until a toothpick inserted comes out clean.
- Cool and serve: Cool 10 minutes in pan, then transfer to a wire rack. Slice and enjoy.
