    • 3/4 teaspoon baking soda

    • 1/4 teaspoon ground cloves
    • 1/4 teaspoon nutmeg
    • 1/4 teaspoon salt
    • 10 tablespoons (140g) unsalted butter, softened
    • 1/2 cup (100g) brown sugar
    • 1 large egg
    • 1/2 cup (160g) unsulfured molasses

 

    • For the Espresso Mixture:
    • 3/4 cup (180ml) brewed espresso or strong coffee

 

    • For the Mascarpone Cream:
    • 1 cup (240ml) heavy cream, chilled
    • 3/4 cup (90g) powdered sugar
    • 1 teaspoon vanilla extract
    • 16 oz (450g) mascarpone cheese, at room temperature

 

  • For Garnish:
  • Unsweetened cocoa powder
  • Crushed gingerbread cookies or festive sprinkles

Instructions

  1. Make the gingerbread cookies: Whisk together the flour, baking soda, baking powder, ginger, cinnamon, cloves, nutmeg, and salt. In another bowl, beat softened butter and brown sugar until creamy. Add the egg and molasses. Mix in dry ingredients and form dough. Chill 1 hour. Roll to 1/4 inch, cut into rectangles, and bake at 350°F (175°C) for 8–10 minutes. Cool completely.
  2. Prepare espresso mixture: Brew espresso or strong coffee and let cool.
  3. Make mascarpone cream: Whip heavy cream, powdered sugar, and vanilla to soft peaks. Separately beat mascarpone until smooth, then fold in whipped cream.
  4. Assemble tiramisu: Quickly dip each cookie in espresso. Arrange in bottom of an 8×8 or 9×9 inch dish. Add a layer of mascarpone. Repeat layers, finishing with cream. Cover and chill overnight.
  5. Decorate & serve: Dust with cocoa powder and top with crushed cookies or sprinkles. Serve chilled.
