Description
These Gingerbread Rice Krispie Treats are a spiced-up holiday version of the classic crispy square. Made with gooey marshmallows, crunchy cereal, and warm gingerbread spices, they’re quick, festive, and perfect for parties or gifting.

			- 6 cups Rice Krispies cereal (use gluten-free if needed)
- 1 bag (10 oz) mini marshmallows (or vegan marshmallows)
- 4 tablespoons unsalted butter (or plant-based butter)
- 1 teaspoon ground cinnamon
- 1 teaspoon ground ginger
- 1/2 teaspoon nutmeg
- 1/4 teaspoon cloves
- 1 teaspoon vanilla extract
- Optional toppings: melted white chocolate, crushed gingerbread cookies, festive sprinkles
Instructions
- Prep pan: Grease or line a 9×13-inch baking dish with parchment paper.
- Melt base: In a large saucepan, melt butter over low heat. Stir in marshmallows until smooth.
- Add spices: Stir in cinnamon, ginger, nutmeg, cloves, and vanilla extract until combined.
- Mix cereal: Remove from heat and fold in Rice Krispies until evenly coated.
- Press mixture: Transfer to prepared dish and press gently into an even layer.
- Decorate: Let cool 30 minutes. Drizzle with white chocolate and sprinkle with crushed cookies or sprinkles if desired.
- Slice & serve: Cut into squares or fun shapes and enjoy!
Notes
- Use fresh marshmallows for best texture.
- Melt slowly over low heat to keep treats soft and chewy.
- Press mixture gently — too much pressure makes them dense.
