Instructions

  1. Prepare Gingerbread Base: Bake a thin sheet of gingerbread using a classic spiced recipe. Cool, then cut out rounds matching the dome mold size.
  2. Make Mousse: Dissolve gelatin in coffee, warm with sugar, and cool. Whip heavy cream to stiff peaks and fold in the cooled mixture and optional mascarpone.
  3. Fill Molds: Spoon mousse into dome molds, filling 3/4 full. Press a gingerbread round into each dome to create the base.
  4. Freeze: Freeze domes overnight until fully set.
  5. Optional Glaze: Prepare a mirror glaze or chocolate coating and pour over frozen domes for a glossy finish.
