Description

Garlic Shrimp in Tomato Sauce is a Mediterranean-inspired seafood dish featuring tender shrimp simmered in a rich tomato-garlic sauce. Elegant enough for special dinners yet simple enough for busy weeknights, this quick recipe brings restaurant-quality flavor to your table in under 30 minutes.

Ingredients

Scale
  • 1 lb (450 g) large shrimp, peeled and deveined
  • 3 tbsp olive oil
  • 4 cloves garlic, finely minced
  • 1 can (14 oz / 400 g) diced tomatoes or equivalent fresh chopped tomatoes
  • 2 tbsp tomato paste
  • 1/2 tsp red pepper flakes (optional)
  • 1/2 tsp sea salt, or to taste
  • 1/4 tsp black pepper
  • 1 tsp dried oregano
  • 1/4 tsp sugar
  • 2 tbsp fresh parsley, chopped
  • 1/2 tsp lemon zest (optional)

Optional Additions: Spinach, zucchini, or olives for variety. Substitute shrimp with scallops or white fish if desired.

Instructions

  1. Prepare the Shrimp: Rinse shrimp under cold water, pat dry, and season lightly with salt and pepper.
  2. Sauté Garlic: Heat olive oil in a skillet over medium heat. Add minced garlic and sauté 30 seconds until fragrant, without browning.
  3. Create the Tomato Base: Stir in diced tomatoes and tomato paste. Simmer for 5 minutes until thickened slightly.
  4. Season the Sauce: Add oregano, pepper, chili flakes, salt, and a pinch of sugar. Reduce heat and cook 8–10 minutes for depth of flavor.
  5. Cook the Shrimp: Add shrimp and stir to coat in sauce. Cook 3–4 minutes until opaque and firm. Avoid overcooking.
  6. Finish and Serve: Stir in parsley and lemon zest before serving. Serve with pasta, rice, or crusty bread.

Notes

  • Use fresh garlic for a more aromatic sauce.
  • Simmer tomatoes slowly for balanced sweetness and depth.
  • Don’t overcook shrimp — they become rubbery if cooked too long.
  • Pair ideas: Serve with rice, spaghetti, or Garlic Butter Corn with Melty Cheese for a complete meal.
  • Storage: Refrigerate up to 2 days. Reheat gently on low heat with a splash of water or broth.
