  • 1 packet (2 ¼ teaspoons) instant yeast
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • ¾ cup warm water (about 110°F)
  • 2 tablespoons olive oil (plus extra for drizzling)
  • 1 teaspoon garlic powder
  • 1 tablespoon fresh rosemary, chopped
  • ½ teaspoon black pepper
  • 1 tablespoon grated Parmesan cheese (optional, for extra flavor)
  • Flaky sea salt, for topping

Instructions

Step 1: Activate the Yeast

  1. In a small bowl, mix warm water, sugar, and yeast.
  2. Let it sit for 5 minutes until foamy.

Step 2: Make the Dough

  1. In a large mixing bowl, combine flour, salt, garlic powder, rosemary, and black pepper.
  2. Add the yeast mixture and olive oil. Mix until a sticky dough forms.
  3. Cover with a clean towel and let rise for 45-60 minutes, until doubled in size.

Step 3: Prepare the Muffins

  1. Grease a muffin tin with olive oil.
  2. Divide the dough evenly into 6-8 muffin cups.
  3. Use your fingers to press small dimples into the tops.
  4. Drizzle with olive oil, then sprinkle with flaky salt and Parmesan cheese.

Step 4: Bake & Serve

  1. Preheat oven to 375°F (190°C).
  2. Bake for 15-18 minutes, or until golden brown.
  3. Let cool slightly, then enjoy warm with extra olive oil or butter.

Notes

  • Use fresh rosemary – It adds the best aromatic flavor to the dough.
