1 lb (450g) sirloin steak, cut into bite-sized strips Salt and black pepper, to taste 2 tablespoons olive oil 4 tablespoons unsalted butter, divided 6 cloves garlic, minced 1/2 teaspoon red pepper flakes (adjust to taste) 1/2 teaspoon smoked paprika (optional) 12 oz (340g) pasta (penne, fettuccine, or your favorite) 3 1/2 cups (830ml) beef broth 1/2 cup (120ml) heavy cream 1/2 cup (50g) grated Parmesan cheese Fresh parsley, chopped, for garnish


Instructions

1. Season steak pieces with salt and pepper. Heat olive oil and 2 tablespoons butter in a large skillet or Dutch oven over medium-high heat. Sear steak pieces 2–3 minutes per side. Remove to a plate. 2. Reduce heat to medium. Add remaining butter and minced garlic to the same pot. Sauté until fragrant. Stir in red pepper flakes and smoked paprika. 3. Pour in beef broth and bring to a simmer, scraping up browned bits. Add pasta and cook uncovered, stirring occasionally, until tender and most of the liquid is absorbed (10–12 minutes). 4. Stir in heavy cream and Parmesan until smooth. Return steak and juices to the pot and toss to coat. 5. Garnish with fresh parsley and serve hot.

Notes

• Use ribeye or flank steak for a richer flavor if desired. • Don’t overcook steak — remove as soon as browned and add back at the end. • Add spinach or peas at the end for extra nutrition. • For less heat, reduce or omit red pepper flakes.
