Instructions
Step 1: Prep the Steak
Pat steak bites dry with paper towels (this helps them sear properly). Season generously with salt, pepper, and smoked paprika.
Step 2: Sear the Steak Bites
Heat olive oil in a large skillet over medium-high heat. Once hot, add the steak in a single layer (cook in batches if needed). Sear for 2–3 minutes per side until golden brown. Remove from the pan and set aside.
Step 3: Add Garlic Butter
Reduce heat to medium. Add butter to the pan, followed by the minced garlic. Stir constantly for 30 seconds until fragrant—don’t let the garlic burn!
Step 4: Return the Steak
Add steak bites back into the pan and toss to coat with the garlic butter. Cook for another minute, then remove steak and set aside while you prepare the sauce.
