  • 1 lb medium shrimp (peeled, deveined)
  • 3 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 4 garlic cloves (minced)
  • 1/4 teaspoon red pepper flakes (optional)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon chopped fresh parsley
  • For the Cheese Sauce:
  • 3 tablespoons unsalted butter
  • 3 tablespoons all-purpose flour
  • 2 cups whole milk, warmed
  • 1 cup grated Parmesan cheese
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground nutmeg (optional)
  • For Assembly:
  • 9 lasagna noodles (cooked al dente)
  • 1 cup shredded mozzarella cheese
  • 1/2 cup ricotta cheese
  • 1/4 cup chopped parsley (for garnish)

Instructions

  1. Preheat oven to 375°F (190°C) and grease a 9×13-inch baking dish.
  2. Cook lasagna noodles in salted water until al dente, then drain and lay flat on parchment paper.
  3. In a skillet, heat olive oil and butter over medium heat. Add garlic and red pepper flakes, cook for 1 minute. Add shrimp, salt, and pepper, and sauté for 3–4 minutes until pink. Stir in lemon juice and parsley. Set aside.
  4. To make cheese sauce, melt butter in a saucepan. Whisk in flour and cook for 1–2 minutes. Gradually add warm milk, whisking until thickened. Stir in Parmesan, salt, and nutmeg. Simmer until smooth.
  5. Spread a little cheese sauce in the baking dish. Layer 3 noodles, 1/3 of the shrimp, dollops of ricotta, cheese sauce, and mozzarella. Repeat for three layers, ending with sauce and mozzarella on top.
  6. Cover with foil and bake for 25 minutes. Remove foil and bake another 10–15 minutes until bubbly and golden. Let rest 10 minutes before serving. Garnish with parsley.

Notes

  • Use freshly grated Parmesan for best flavor and melting.
  • Do not overcook shrimp; they will continue cooking in the oven.
  • Let the lasagna rest before slicing for cleaner portions.
  • Make ahead and refrigerate unbaked lasagna for up to 24 hours.
