- For the Garlic Butter Shrimp:
- 1 lb medium shrimp (peeled, deveined)
- 3 tablespoons unsalted butter
- 1 tablespoon olive oil
- 4 garlic cloves (minced)
- 1/4 teaspoon red pepper flakes (optional)
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon fresh lemon juice
- 1 tablespoon chopped fresh parsley
- For the Cheese Sauce:
- 3 tablespoons unsalted butter
- 3 tablespoons all-purpose flour
- 2 cups whole milk, warmed
- 1 cup grated Parmesan cheese
- 1/2 teaspoon salt
- 1/4 teaspoon ground nutmeg (optional)
- For Assembly:
- 9 lasagna noodles (cooked al dente)
- 1 cup shredded mozzarella cheese
- 1/2 cup ricotta cheese
- 1/4 cup chopped parsley (for garnish)
Instructions
- Preheat oven to 375°F (190°C) and grease a 9×13-inch baking dish.
- Cook lasagna noodles in salted water until al dente, then drain and lay flat on parchment paper.
- In a skillet, heat olive oil and butter over medium heat. Add garlic and red pepper flakes, cook for 1 minute. Add shrimp, salt, and pepper, and sauté for 3–4 minutes until pink. Stir in lemon juice and parsley. Set aside.
- To make cheese sauce, melt butter in a saucepan. Whisk in flour and cook for 1–2 minutes. Gradually add warm milk, whisking until thickened. Stir in Parmesan, salt, and nutmeg. Simmer until smooth.
- Spread a little cheese sauce in the baking dish. Layer 3 noodles, 1/3 of the shrimp, dollops of ricotta, cheese sauce, and mozzarella. Repeat for three layers, ending with sauce and mozzarella on top.
- Cover with foil and bake for 25 minutes. Remove foil and bake another 10–15 minutes until bubbly and golden. Let rest 10 minutes before serving. Garnish with parsley.
Notes
- Use freshly grated Parmesan for best flavor and melting.
- Do not overcook shrimp; they will continue cooking in the oven.
- Let the lasagna rest before slicing for cleaner portions.
- Make ahead and refrigerate unbaked lasagna for up to 24 hours.
