12 oz spaghetti or linguine

½ cup grated Parmesan cheese
2 tablespoons chopped fresh parsley

For the garlic bread crumb topping:
1½ cups fresh breadcrumbs (from about 2 slices of bread)
2 tablespoons olive oil
2 tablespoons butter
1 teaspoon garlic powder
½ teaspoon Italian seasoning
Salt to taste


Instructions

Start by boiling the pasta in a large pot of salted water until al dente. Reserve about ½ cup of the pasta water before draining.

While the pasta cooks, prepare the garlic bread crumb topping. In a skillet, melt the butter and olive oil over medium heat. Add the breadcrumbs, garlic powder, Italian seasoning, and a pinch of salt. Toast the mixture for 5–7 minutes, stirring frequently, until golden brown and crispy. Set aside.

In the same skillet (or clean one), melt the butter over medium-low heat and sauté the minced garlic for 1–2 minutes until fragrant, not browned. Add red pepper flakes if using.

Add the cooked pasta to the skillet and toss to coat in the garlic butter. Add reserved pasta water a little at a time to help the butter cling to the noodles.

Stir in the Parmesan cheese, salt, and black pepper. Toss until the cheese melts and coats the pasta evenly.

Top the pasta with a generous handful of garlic breadcrumbs and chopped parsley. Serve immediately with more breadcrumbs on the side.
