  • 20 medium white or cremini mushrooms
  • 2 tbsp olive oil, divided
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 1/2 cup breadcrumbs (panko or regular)
  • 1/4 cup grated Parmesan cheese
  • 2 tbsp fresh parsley, finely chopped
  • 1 tbsp fresh thyme leaves (or 1 tsp dried thyme)
  • Salt and black pepper, to taste
  • Optional garnish: Smoked paprika or extra herbs

Instructions

  1. Prep the mushrooms: Preheat oven to 375°F (190°C). Clean mushrooms with a damp cloth, remove stems, and finely chop stems. Set caps aside.
  2. Sauté aromatics: Heat 1 tbsp olive oil in a skillet. Add chopped stems, onion, and garlic. Cook 5 minutes until softened.
  3. Mix filling: In a bowl, combine sautéed mixture with breadcrumbs, Parmesan, parsley, thyme, salt, pepper, and remaining olive oil.
  4. Stuff caps: Spoon filling firmly into mushroom caps. Arrange on a lined baking sheet.
  5. Bake: Bake 18–20 minutes until mushrooms are tender and tops golden brown.
  6. Serve: Garnish with extra herbs and serve hot.
