- 20 medium white or cremini mushrooms
- 2 tbsp olive oil, divided
- 1 small onion, finely chopped
- 3 cloves garlic, minced
- 1/2 cup breadcrumbs (panko or regular)
- 1/4 cup grated Parmesan cheese
- 2 tbsp fresh parsley, finely chopped
- 1 tbsp fresh thyme leaves (or 1 tsp dried thyme)
- Salt and black pepper, to taste
- Optional garnish: Smoked paprika or extra herbs
Instructions
- Prep the mushrooms: Preheat oven to 375°F (190°C). Clean mushrooms with a damp cloth, remove stems, and finely chop stems. Set caps aside.
- Sauté aromatics: Heat 1 tbsp olive oil in a skillet. Add chopped stems, onion, and garlic. Cook 5 minutes until softened.
- Mix filling: In a bowl, combine sautéed mixture with breadcrumbs, Parmesan, parsley, thyme, salt, pepper, and remaining olive oil.
- Stuff caps: Spoon filling firmly into mushroom caps. Arrange on a lined baking sheet.
- Bake: Bake 18–20 minutes until mushrooms are tender and tops golden brown.
- Serve: Garnish with extra herbs and serve hot.
