These Fresh Vegetable Tortilla Roll Ups are colorful, healthy, and packed with crunchy vegetables and a creamy spread — the perfect vegetarian pinwheels for parties, lunchboxes, or a light dinner.
Ingredients
4 large flour tortillas (8–10 inches) 8 oz (225g) cream cheese, softened 1/4 cup mayonnaise or Greek yogurt 1 teaspoon garlic powder 1 teaspoon onion powder 1/2 teaspoon dried dill (optional) 1/2 teaspoon salt and black pepper, or to taste 1/2 cup shredded carrots 1/2 cup thinly sliced red bell pepper 1/2 cup thinly sliced cucumber 1/4 cup thinly sliced red onion 1/4 cup chopped fresh spinach or lettuce 2 tablespoons chopped fresh parsley or cilantro (optional)
Instructions
1. In a bowl, mix cream cheese, mayonnaise or yogurt, garlic powder, onion powder, dill, salt, and pepper until smooth. 2. Wash, dry, and slice all vegetables thinly. 3. Lay a tortilla flat and spread with 2 tablespoons of the creamy mixture. 4. Layer vegetables evenly over the spread. 5. Roll the tortilla tightly into a log. Repeat with remaining tortillas. 6. Wrap each roll in plastic wrap and chill for 20–30 minutes. 7. Slice into 1-inch pinwheels and arrange on a platter. Garnish with herbs if desired.
