Instructions
- Prepare the Pie Crust: Mix flour, sugar, and salt in a bowl. Cut in butter until crumbly. Add ice water until the dough forms, then chill for 30 minutes.
- Prepare the Filling: Mix rhubarb, strawberries, sugar, cornstarch, lemon juice, and cinnamon. Let sit for 10-15 minutes.
- Assemble the Pie: Roll out the chilled dough and fit it into a 9-inch pie dish. Add the fruit filling and fold dough edges over the top, leaving the center exposed.
- Bake the Pie: Preheat oven to 375°F (190°C) and bake for 45-50 minutes until the crust is golden and the filling is bubbling. Cover edges with foil if needed.
- Cool and Serve: Cool for at least 1 hour before slicing. Serve with vanilla ice cream if desired.
