French Dip Tortilla Roll Ups are a warm, savory, and cheesy twist on the classic French dip sandwich. Juicy roast beef and melted provolone are wrapped in soft flour tortillas, baked until golden, and served with a rich homemade au jus for dipping. - 1 small yellow onion, finely chopped
- 2 cloves garlic, minced
- 1 cup beef broth
- 1 teaspoon Worcestershire sauce
- Salt and black pepper, to taste
- 6 (8-inch) flour tortillas
- 12 slices deli-style roast beef (about 1/2 pound)
- 6 slices provolone cheese
- Optional garnish: chopped parsley or green onions
Instructions
- Make the Au Jus: Melt butter in a saucepan over medium heat. Add onion and cook until softened, about 4 minutes. Add garlic and cook 1 minute more. Stir in beef broth and Worcestershire sauce, season with salt and pepper, and simmer 5–6 minutes. Set aside.
- Assemble Roll Ups: Lay a tortilla flat. Place 2 slices of roast beef in the center and top with 1 slice of provolone cheese. Roll up tightly like a burrito.
- Bake: Preheat oven to 375°F (190°C). Place roll ups seam-side down on a parchment-lined baking sheet. Lightly brush or spray with oil or butter. Bake for 12–15 minutes until golden and cheese is melted.
- Serve: Slice roll ups diagonally and serve warm with the au jus dipping sauce.
Notes
- Use thinly sliced, lightly seasoned roast beef for best results.
- Provolone melts best, but Swiss or mozzarella can be substituted.
- Warm tortillas slightly before rolling if they feel stiff.
