- 1/2 cup (113g) unsalted butter
- 3/4 cup (150g) granulated sugar
- 3 large eggs, room temperature
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon kosher salt
- 3/4 cup (75g) almond flour
- Powdered sugar, berries, or whipped cream for serving (optional)
Instructions
- Prep the Pan: Preheat oven to 350°F (175°C). Grease an 8-inch springform pan and line the bottom with parchment paper.
- Melt Chocolate & Butter: In a heat-safe bowl, melt the chopped chocolate and butter together over a double boiler or in short microwave intervals. Stir until smooth.
- Beat Eggs & Sugar: In a mixing bowl, beat eggs and sugar for 3–5 minutes until pale and thick.
- Combine: Add vanilla and salt. Slowly pour in melted chocolate while stirring constantly.
- Fold Almond Flour: Gently fold in almond flour until fully incorporated.
- Bake: Pour into prepared pan. Bake 25–30 minutes, until edges are set and center is slightly soft.
- Cool & Serve: Cool completely, then dust with powdered sugar or serve with berries/whipped cream.
