Ingredients

Scale

  • 1 lb ground beef (lean)
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 (10 oz) can enchilada sauce (red or green)
  • 1 (14 oz) can diced tomatoes
  • 1 cup beef broth
  • 1 tsp ground cumin
  • 1/2 tsp smoked paprika
  • 1/4 tsp chili powder (optional, for extra spice)
  • 1 (20 oz) package refrigerated cheese tortellini
  • 1 1/2 cups shredded Mexican blend cheese
  • 2 green onions, sliced (for garnish)
  • 1 tbsp olive oil
  • Salt and pepper, to taste

Instructions

  1. Brown the beef: Heat olive oil in a large skillet over medium heat. Add diced onions and garlic, sauté for 2 minutes, then add ground beef. Cook until beef is browned and crumbled. Drain any excess fat.
  2. Simmer the sauce: Stir in enchilada sauce, diced tomatoes, beef broth, cumin, smoked paprika, and chili powder. Let it simmer for 5 minutes, stirring occasionally.
  3. Cook the tortellini: Stir in the cheese tortellini. Cover and cook for 5–7 minutes, until the tortellini are tender and heated through.
  4. Add cheese: Sprinkle the shredded cheese over the top. Cover again and cook for another 2 minutes, until the cheese melts into gooey perfection.
  5. Garnish and serve: Sprinkle with green onions before serving. Enjoy hot!

Notes

  • Use fresh tortellini: Refrigerated tortellini cook quickly and have better texture than frozen.
  • Don’t overcook the pasta: Since tortellini is delicate, it only needs a few minutes to become perfectly tender.
  • Season your beef well: A well-seasoned beef base makes the sauce even richer and more authentic.
