Instructions
- Prepare the crust: Preheat oven to 350°F (175°C). Mix graham cracker crumbs, melted butter, and sugar. Press into a parchment-lined 9×9-inch pan and bake for 10 minutes. Cool slightly.
- Make the cheesecake layer: In a large bowl, beat cream cheese until smooth. Add sugar and mix until fluffy. Incorporate eggs, lemon juice, vanilla, and zest until just combined.
- Cook the fig topping: In a small saucepan, combine figs, honey, and lemon juice. Cook over medium heat for about 10 minutes until soft and thickened. Add cornstarch slurry if needed and cool slightly.
- Assemble: Spread cheesecake mixture over crust. Spoon fig topping on top and swirl gently for a marbled look.
