Ingredients

For the Salad: 2 (15 oz) cans chickpeas, drained and rinsed 3/4 cup feta cheese, crumbled 1/2 cup dried cranberries 1/4 cup red onion, finely chopped 1/4 cup fresh parsley, chopped For the Lemon Vinaigrette: 1/4 cup olive oil 3 tablespoons lemon juice (about 1 large lemon) 1 teaspoon Dijon mustard 1 teaspoon honey (optional) 1/2 teaspoon salt 1/4 teaspoon black pepper


Instructions

1. In a small bowl or jar, whisk together olive oil, lemon juice, Dijon mustard, honey, salt, and pepper until emulsified. 2. In a large bowl, combine chickpeas, feta, cranberries, red onion, and parsley. 3. Pour the vinaigrette over the chickpea mixture and toss gently to coat. 4.
