Ingredients
- 1 cup cottage cheese
- 3 eggs
- 1/2 cup butter, melted
- 1 cup all-purpose flour
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 teaspoon baking powder
Instructions
Step 1: Preheat your oven
Preheat your oven to 350°F (175°C). Grease a 12-cup muffin tin or line with parchment muffin liners.
Step 2: Mix wet ingredients
In a medium mixing bowl, combine the cottage cheese, eggs, and melted butter. Whisk until smooth and creamy.
Step 3: Add dry ingredients
Add flour, baking powder, salt, and pepper to the wet mixture. Stir until just combined. Do not overmix.
Step 4: Fill muffin tins
Divide the batter evenly among the muffin cups, filling each about 3/4 of the way full.
Step 5: Bake
Bake in the preheated oven for 25–30 minutes, or until golden brown on top and a toothpick inserted into the center comes out clean.
Step 6: Cool and serve
Allow muffins to cool in the pan for 5 minutes, then transfer to a wire rack to cool slightly. Enjoy warm or at room temperature.
