Eggnog Filling:

  • ½ cup (115g) unsalted butter, softened
  • 1½ cups (180g) powdered sugar
  • 3 tablespoons eggnog
  • ½ teaspoon ground nutmeg
  • Optional: pinch of cinnamon or splash of vanilla extract

Instructions

  1. Preheat: Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. Make Dough: Cream butter and sugar until light and fluffy. Add egg and vanilla. In a separate bowl, whisk dry ingredients, then mix into wet ingredients until dough forms.
  3. Shape: Roll dough into 1-inch balls, coat in cinnamon sugar, and place on baking sheets.
  4. Thumbprint: Press an indentation into each cookie. Bake 9–11 minutes until edges are just set.
  5. Cool: Let cookies cool completely on a wire rack.
  6. Filling: Beat butter, powdered sugar, eggnog, and nutmeg until smooth.
