Easy Soft Flatbread Recipe (No Yeast): Fluffy

There’s something magical about homemade bread—especially when it’s this easy. This Easy Soft Flatbread Recipe (No Yeast) gives you soft, fluffy, flexible flatbread in under 30 minutes with just a handful of ingredients.

Ingredients

Scale

  • 2 cups all-purpose flour (plus extra for dusting)
  • 1½ teaspoons baking powder
  • ½ teaspoon salt
  • 1 cup plain yogurt (Greek or regular)
  • Optional: 2 tablespoons olive oil or melted butter for brushing

Instructions

Step 1: Mix the Dry Ingredients
In a large bowl, whisk together the flour, baking powder, and salt.

Step 2: Add the Yogurt
Add the yogurt and mix with a spoon or hands until a shaggy dough forms.

Step 3: Knead Briefly
Turn the dough onto a lightly floured surface. Knead for 1–2 minutes until the dough is smooth and soft. If it’s too sticky, add a little flour.

Step 4: Rest the Dough
Cover the dough with a clean towel and let it rest for 10–15 minutes. This helps relax the gluten and makes it easier to roll.

Step 5: Divide and Roll Out
Divide the dough into 6–8 equal portions. Roll each into a ball, then flatten and roll out into a round about 6 inches wide.

Step 6: Cook the Flatbread
Heat a dry skillet or griddle over medium-high heat. Cook each flatbread for 1–2 minutes per side until golden spots appear and it puffs slightly. Adjust heat as needed to avoid burning.

Step 7: Brush and Serve
If desired, brush with olive oil or melted butter while still warm. Serve immediately!

Notes

  • Use full-fat yogurt – Adds richness and moisture
  • Let the dough rest – Even 10 minutes makes rolling easier
  • Don’t roll too thin – Thicker dough = softer flatbread
