Description
If you’re looking for a crisp, refreshing dish that bursts with flavor and requires minimal effort, this Marinated Cucumbers, Onions, and Tomatoes recipe is a must-have.
Ingredients
- 3 medium cucumbers, peeled and sliced
- 3 medium tomatoes, cut into wedges or chunks
- 1 medium red onion, thinly sliced
- ¼ cup white vinegar
- ¼ cup water
- 3 tablespoons granulated sugar
- Salt and pepper to taste
- 1 tablespoon fresh chopped parsley (optional)
Optional Add-ins:
- Pickled cherry tomatoes
- Fresh dill or basil
- Crushed garlic for extra depth
Instructions
Peel and slice the cucumbers into thin rounds. Cut the tomatoes into wedges or chunks, depending on your texture preference. Thinly slice the red onion.
In a small bowl, combine white vinegar, water, sugar, salt, and pepper. Whisk until the sugar is mostly dissolved. Taste and adjust for desired balance of sweetness and tang.
In a large bowl, add the cucumbers, onions, and tomatoes. Pour the marinade over the top and toss gently to coat.
Cover and refrigerate for at least 1 hour before serving. For deeper flavor, marinate for up to 4 hours or overnight.
Stir again just before serving. Garnish with chopped fresh herbs if desired.
Notes
- Use firm, ripe tomatoes like Roma or heirloom varieties for best texture
- Peel cucumbers if the skin is thick or waxed—English cucumbers can be left unpeeled
- Red onion adds the perfect bite and color; soak slices in cold water first to mellow the flavor if desired
- For a more pickled flavor, increase the vinegar slightly or add a splash of apple cider vinegar
- Letting the salad sit for at least 1 hour deepens the flavor dramatically
