  • 1 (3 oz) box of flavored Jello – Pick your favorite! Strawberry, grape, lime, blue raspberry—any color and flavor will work.
  • ½ cup hot water – For dissolving the gelatin.
  • 1 ½ cups mini marshmallows – These melt to give the roll ups their signature chewy texture and help them set.

Optional toppings and extras:

  • Sprinkles for decoration
  • Sugar crystals for texture
  • A second Jello flavor for a two-tone swirl effect

Instructions

Step 1: Prep your pan
Line an 8×8 inch square pan with parchment paper or lightly grease it. This helps the roll ups release easily once set.

Step 2: Mix the Jello and water
In a microwave-safe bowl, whisk the Jello powder with ½ cup of hot water until fully dissolved.

Step 3: Add marshmallows
Stir in 1 ½ cups of mini marshmallows. Microwave the mixture on high for 1 minute.

Step 4: Whisk until smooth
After microwaving, whisk the mixture vigorously until all the marshmallows are fully melted and the mixture is foamy and slightly thickened.

Step 5: Pour into the pan
Immediately pour the mixture into your prepared dish and tilt gently to spread it evenly. The layer should be thin and smooth.

Step 6: Chill to set
Place the pan in the refrigerator and let it chill for at least 30–45 minutes, or until firm to the touch.

Step 7: Slice and roll
Once set, lift the sheet out of the pan. Use a sharp knife or kitchen scissors to slice into long strips (about 1 inch wide). Gently roll each strip into a spiral.

Step 8: Serve or store
Place the roll ups seam-side down on a tray or plate. Serve immediately, or store in an airtight container until ready to enjoy.
