  • ¾ cup warm water (110°F/45°C)
  • 2 tablespoons olive oil (plus extra for drizzling)
  • 1 teaspoon garlic powder (optional)
  • 1 teaspoon dried rosemary or thyme (optional)
  • Flaky sea salt, for topping

Instructions

Step 1: Activate the Yeast

  1. In a bowl, combine warm water, sugar, and yeast. Stir and let sit for 5-10 minutes until foamy.

Step 2: Mix the Dough

  1. In a large mixing bowl, whisk together flour and salt.
  2. Pour in the yeast mixture and olive oil, stirring until a sticky dough forms.
  3. Cover with a towel and let rest for 5 minutes.

Step 3: First Rise (Quick Proofing)

  1. Knead the dough lightly in the bowl for 1 minute until smooth.
  2. Cover and let it rise in a warm spot for 1 hour, or until doubled in size.

Step 4: Shape the Focaccia

  1. Grease an 8×8 baking dish or sheet pan with olive oil.
  2. Gently stretch the dough into the pan.
  3. Use your fingertips to create dimples across the surface.
  4. Drizzle with olive oil and sprinkle with garlic powder, herbs, and flaky salt.

Step 5: Second Rise & Bake

  1. Let the dough rise again for 30 minutes while preheating the oven to 400°F (200°C).
  2. Bake for 20-25 minutes, or until golden brown and crisp on top.

Step 6: Cool & Serve

  1. Let cool for 10 minutes, then slice and enjoy!
