Instructions
Step 1: Activate the Yeast
- In a bowl, combine warm water, sugar, and yeast. Stir and let sit for 5-10 minutes until foamy.
Step 2: Mix the Dough
- In a large mixing bowl, whisk together flour and salt.
- Pour in the yeast mixture and olive oil, stirring until a sticky dough forms.
- Cover with a towel and let rest for 5 minutes.
Step 3: First Rise (Quick Proofing)
- Knead the dough lightly in the bowl for 1 minute until smooth.
- Cover and let it rise in a warm spot for 1 hour, or until doubled in size.
Step 4: Shape the Focaccia
- Grease an 8×8 baking dish or sheet pan with olive oil.
- Gently stretch the dough into the pan.
- Use your fingertips to create dimples across the surface.
- Drizzle with olive oil and sprinkle with garlic powder, herbs, and flaky salt.
Step 5: Second Rise & Bake
- Let the dough rise again for 30 minutes while preheating the oven to 400°F (200°C).
- Bake for 20-25 minutes, or until golden brown and crisp on top.
Step 6: Cool & Serve
- Let cool for 10 minutes, then slice and enjoy!
