  • 9 tablespoons all-purpose flour
  • ¼ teaspoon baking powder
  • ⅛ teaspoon baking soda
  • Small pinch of salt
  • 3 tablespoons plant milk (almond, soy, or oat)
  • ½ tablespoon light oil (neutral, like canola or sunflower)
  • ¼ teaspoon vanilla extract

For the Filling:

  • 1 tablespoon brown sugar
  • ¼ teaspoon ground cinnamon
  • 1 teaspoon plant-based butter or margarine (softened)

For the Glaze:

  • 2 tablespoons powdered sugar
  • ½ teaspoon plant milk
  • ¼ teaspoon vanilla extract

Instructions

Step 1: In a small bowl, mix flour, baking powder, baking soda, and salt. Add plant milk, oil, and vanilla. Stir until it forms a soft dough.

Step 2: Lightly flour your surface or a piece of parchment paper. Turn out the dough and press it into a rectangle about 4 x 6 inches in size.

Step 3: In another small bowl, mix brown sugar and cinnamon. Spread softened plant-based butter over the dough and sprinkle with the cinnamon-sugar mixture.

Step 4: Roll the dough up gently from the short end to form a swirl. Pinch the seam to seal and shape the roll.

Step 5: Lightly oil your mug. Place the cinnamon roll inside the mug, swirl-side up.

Step 6: Microwave on high for 45 to 55 seconds. Start with 45 seconds and add more time only if the dough still looks raw on top. Let it rest for 1 minute before topping.

Step 7: In a separate bowl, mix powdered sugar, milk, and vanilla until smooth. Drizzle over the warm cinnamon roll and enjoy.

Notes

  • Don’t overwork the dough. The less you handle it, the softer the roll.
  • Microwave ovens vary. Check your cinnamon roll after 45 seconds and adjust as needed.
  • Let it rest. A 1-minute rest after microwaving helps the dough finish cooking and makes it more tender.
  • Want more filling? Add a little extra sugar and cinnamon—just don’t overload or it may ooze out during cooking.
