Ingredients

  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ¾ cup (170g) unsalted butter, softened
  • 1 cup (200g) brown sugar
  • ½ cup (100g) granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1 cup (180g) chocolate chips (white, milk, or semi-sweet)
  • 1 cup (150g) Easter candy (Mini Eggs, M&Ms, or jelly beans)

For the Frosting:

  • ½ cup (113g) unsalted butter, softened
  • 2 cups (240g) powdered sugar
  • 2 tablespoons heavy cream or milk
  • 1 teaspoon vanilla extract
  • Pastel food coloring (optional)
  • Easter sprinkles & extra candy for decoration

Instructions

Step 1: Preheat & Prepare the Pan

Preheat your oven to 350°F (175°C). Grease and line a 9-inch or 10-inch round cake pan with parchment paper.

Step 2: Mix the Dry Ingredients

In a medium bowl, whisk together flour, baking soda, and salt. Set aside.

Step 3: Cream the Butter & Sugar

In a large mixing bowl, beat butter, brown sugar, and granulated sugar until light and fluffy (about 2-3 minutes).

Step 4: Add Eggs & Vanilla

Mix in the eggs, one at a time, followed by vanilla extract.

Step 5: Combine & Fold in Mix-Ins

Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Fold in chocolate chips and Easter candy.

Step 6: Shape & Bake the Cookie Cake

Press the dough evenly into the prepared pan. Bake for 20-25 minutes, or until golden brown around the edges but slightly soft in the center. Let cool completely before decorating.

Step 7: Make the Frosting

Beat butter, powdered sugar, heavy cream, and vanilla until smooth and fluffy. Add food coloring if desired.

Step 8: Decorate & Serve

Pipe or spread the frosting around the edges of the cookie cake. Decorate with Easter sprinkles and extra candy. Slice and enjoy!
