  • ½ teaspoon red pepper flakes (optional)
  • 1 tablespoon soy sauce
  • 1 teaspoon fish sauce (optional, for extra umami)
  • 4 cups chicken or vegetable broth
  • 1 cup coconut milk
  • 1 tablespoon lime juice

For the Dumplings & Add-Ins:

  • 12 frozen dumplings, wontons, or potstickers
  • 1 cup mushrooms, sliced
  • 1 cup baby spinach or bok choy
  • ½ cup carrots, julienned
  • 1 teaspoon honey or brown sugar (optional, balances flavors)

For Garnish:

  • Fresh cilantro or Thai basil
  • Sliced green onions
  • Lime wedges
  • Sesame seeds or chili oil (optional)

Instructions

Step 1: Sauté the Aromatics

  1. Heat sesame oil in a large pot over medium heat.
  2. Add garlic, ginger, and onions, and sauté for 2 minutes until fragrant.
  3. Stir in curry paste, turmeric, and red pepper flakes, cooking for 1 minute to release flavors.

Step 2: Make the Curry Broth

  1. Pour in chicken or vegetable broth, stirring to combine.
  2. Add soy sauce, fish sauce, coconut milk, and lime juice.
  3. Let simmer for 10 minutes, stirring occasionally.

Step 3: Cook the Dumplings & Vegetables

  1. Add frozen dumplings directly into the broth. Let cook for 5-6 minutes, or until heated through.
  2. Toss in mushrooms, carrots, and baby spinach. Simmer for another 3 minutes.
  3. Taste and adjust seasoning with salt, soy sauce, or honey if needed.

Step 4: Serve & Garnish

  1. Ladle soup into bowls and top with green onions, cilantro, and sesame seeds.
  2. Serve with lime wedges and optional chili oil for extra spice.
