- 4 cups chicken or vegetable broth
- 1 cup coconut milk
- 1 tablespoon lime juice
For the Dumplings & Add-Ins:
- 12 frozen dumplings, wontons, or potstickers
- 1 cup mushrooms, sliced
- 1 cup baby spinach or bok choy
- ½ cup carrots, julienned
- 1 teaspoon honey or brown sugar (optional, balances flavors)
For Garnish:
- Fresh cilantro or Thai basil
- Sliced green onions
- Lime wedges
- Sesame seeds or chili oil (optional)
Instructions
Step 1: Sauté the Aromatics
- Heat sesame oil in a large pot over medium heat.
- Add garlic, ginger, and onions, and sauté for 2 minutes until fragrant.
- Stir in curry paste, turmeric, and red pepper flakes, cooking for 1 minute to release flavors.
Step 2: Make the Curry Broth
- Pour in chicken or vegetable broth, stirring to combine.
- Add soy sauce, fish sauce, coconut milk, and lime juice.
- Let simmer for 10 minutes, stirring occasionally.
Step 3: Cook the Dumplings & Vegetables
- Add frozen dumplings directly into the broth. Let cook for 5-6 minutes, or until heated through.
- Toss in mushrooms, carrots, and baby spinach. Simmer for another 3 minutes.
- Taste and adjust seasoning with salt, soy sauce, or honey if needed.
Step 4: Serve & Garnish
- Ladle soup into bowls and top with green onions, cilantro, and sesame seeds.
- Serve with lime wedges and optional chili oil for extra spice.
