Ingredients
1 1/2 pounds (680g) boneless, skinless chicken breast or thighs, cut into chunks 1 1/2 cups (285g) uncooked long-grain white rice 2 cups (480ml) chicken broth 1 1/2 cups (360ml) prepared tzatziki sauce (store-bought or homemade) 1 cup (150g) cherry tomatoes, halved 1/2 cup (75g) diced cucumber 1/4 cup (30g) crumbled feta cheese 1 tablespoon olive oil Salt and pepper, to taste 2 tablespoons fresh parsley, chopped (optional, for garnish)
Instructions
1. Preheat oven to 375°F (190°C). In a 9×13-inch baking dish, combine uncooked rice and chicken broth. 2. Stir in half of the tzatziki sauce and season lightly with salt and pepper. 3. Add chicken chunks, spreading evenly over the rice. 4. Scatter cherry tomatoes and diced cucumber on top. Drizzle with olive oil and sprinkle with feta cheese. 5. Cover dish tightly with foil and bake for 45–50 minutes, until rice is tender and chicken is cooked through. 6. Let stand 5 minutes before uncovering. Drizzle with remaining tzatziki sauce and garnish with parsley before serving.
