  • 1/3 cup (75g) unsalted butter, softened
  • 3 large egg yolks
  • 1/3 cup (80ml) heavy cream or milk
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon nutmeg (optional)

Optional Parmesan Upgrade:

  • 1/2 cup grated Parmesan cheese
  • 1 tablespoon chopped chives or parsley (for garnish)

Instructions

  1. Prepare the Potatoes: Peel and cut potatoes into chunks. Boil in salted water until tender (15–20 minutes). Drain and let steam dry.
  2. Mash Until Smooth: Mash with a ricer or masher until smooth. Avoid food processors to prevent gumminess.
  3. Add Butter and Cream: Stir in butter until melted, then add cream or milk until silky.
  4. Add Egg Yolks and Season: Cool slightly, then beat in egg yolks one by one. Season with salt, pepper, and nutmeg.
  5. Pipe Onto Tray: Preheat oven to 425°F (220°C). Pipe rosettes of potato mixture onto parchment-lined tray using a piping bag.
  6. Brush with Egg Wash: Brush lightly with a beaten egg or melted butter for a golden finish.
  7. Bake Until Golden: Bake for 15–20 minutes until edges are crisp and golden brown. Serve warm.
