Instructions
- Prepare the Potatoes: Peel and cut potatoes into chunks. Boil in salted water until tender (15–20 minutes). Drain and let steam dry.
- Mash Until Smooth: Mash with a ricer or masher until smooth. Avoid food processors to prevent gumminess.
- Add Butter and Cream: Stir in butter until melted, then add cream or milk until silky.
- Add Egg Yolks and Season: Cool slightly, then beat in egg yolks one by one. Season with salt, pepper, and nutmeg.
- Pipe Onto Tray: Preheat oven to 425°F (220°C). Pipe rosettes of potato mixture onto parchment-lined tray using a piping bag.
- Brush with Egg Wash: Brush lightly with a beaten egg or melted butter for a golden finish.
- Bake Until Golden: Bake for 15–20 minutes until edges are crisp and golden brown. Serve warm.
