1824 large fresh strawberries
8 oz cream cheese, softened
1/4 cup powdered sugar (or more to taste)
1/2 teaspoon vanilla extract
1/4 cup crushed graham crackers (for topping)
Optional: 1 tablespoon heavy cream for smoother filling
Optional garnish: mint leaves or white chocolate shavings


Instructions

Start by rinsing and drying the strawberries thoroughly. Slice each strawberry in half lengthwise. With a small paring knife or melon baller, gently scoop out a shallow cavity in each strawberry half to make room for the filling.

In a medium mixing bowl, beat the cream cheese, powdered sugar, and vanilla extract until smooth and fluffy. If the filling is too thick, add a tablespoon of heavy cream to thin it slightly.

Transfer the mixture to a piping bag fitted with a star tip or zip-top bag with a corner snipped off. Pipe a generous dollop into the center of each strawberry half.

Sprinkle crushed graham crackers over the top and garnish with mint leaves or a drizzle of melted chocolate, if desired. Chill for 10–15 minutes before serving for the best texture.

Notes

Choose firm, ripe strawberries that hold their shape. Let your cream cheese come to room temperature for easier mixing. Want a twist? Add lemon zest or swap vanilla for almond extract. You can also substitute the graham cracker topping with crushed Oreos or chocolate cookie crumbs for a decadent twist.
