Ingredients
- 2 ripe bananas, sliced into ½-inch thick rounds
- ½ cup unsweetened Greek yogurt (or coconut yogurt for dairy-free/vegan)
- ¼ cup diced strawberries
- 2 tablespoons mini chocolate chips
- 2 tablespoons chopped peanuts or walnuts
- 1 tablespoon maple syrup or honey (optional, for added sweetness)
- 1 teaspoon vanilla extract (optional, for flavor boost)
Instructions
First, line a baking sheet with parchment paper. Slice your bananas into bite-sized rounds about half an inch thick, and place them evenly spaced on the tray.
In a small bowl, mix your yogurt with maple syrup and vanilla extract if you’re using them. Using a spoon or a piping bag, top each banana slice with a small dollop of yogurt.
Next, sprinkle each bite with a pinch of diced strawberries, a few mini chocolate chips, and a small amount of crushed peanuts or walnuts. Gently press the toppings into the yogurt so they stick after freezing.
Place the baking sheet in the freezer for at least 1–2 hours, or until the bites are completely frozen and firm to the touch.
Once frozen, transfer the banana split bites into an airtight container or freezer bag for longer storage. They’re ready to enjoy anytime you want a quick frozen treat.
Notes
Don’t overtop your banana slices. A small amount of yogurt and toppings go a long way and help keep the bites clean and easy to eat.
Pipe the yogurt instead of spooning it if you want a neater, more polished presentation.
Place the tray flat in the freezer and allow enough space around each bite to avoid sticking.
Once frozen, store the bites in a single layer or with parchment between layers to prevent clumping.
