- 2 cups cooked, shredded chicken (rotisserie chicken works great)
- 1 packet taco seasoning mix (or homemade seasoning)
- 1 can (15 oz) refried beans
- 1 ½ cups shredded cheddar or Mexican cheese blend
- 1 cup cooked rice (white or brown)
- 1 cup guacamole
- 1 cup salsa (your favorite brand or homemade)
- ½ cup sour cream or Greek yogurt
- 6 large flour tortillas (burrito-size)
- Fresh cilantro, for garnish (optional)
Instructions
- Prepare the chicken: In a large skillet, toss the cooked shredded chicken with the taco seasoning and a splash of water. Heat until fully warmed and coated in seasoning.
- Warm the refried beans: Heat the beans either in a small saucepan or microwave until smooth and spreadable.
- Warm the tortillas: Wrap them in a damp paper towel and microwave for 20-30 seconds, or warm individually in a skillet.
- Assemble the burritos:
- Spread a layer of refried beans down the center of each tortilla.
- Add a scoop of seasoned chicken.
- Sprinkle with shredded cheese.
- Top with a spoonful of cooked rice.
- Add a generous dollop of guacamole.
- Spoon on salsa.
- Finish with a drizzle of sour cream or Greek yogurt.
- Wrap: Fold in the sides and tightly roll the burrito from the bottom up.
- Serve immediately or wrap in foil for later.
