  • 1 ½ cups shredded cheddar or Mexican cheese blend
  • 1 cup cooked rice (white or brown)
  • 1 cup guacamole
  • 1 cup salsa (your favorite brand or homemade)
  • ½ cup sour cream or Greek yogurt
  • 6 large flour tortillas (burrito-size)
  • Fresh cilantro, for garnish (optional)

Instructions

  1. Prepare the chicken: In a large skillet, toss the cooked shredded chicken with the taco seasoning and a splash of water. Heat until fully warmed and coated in seasoning.
  2. Warm the refried beans: Heat the beans either in a small saucepan or microwave until smooth and spreadable.
  3. Warm the tortillas: Wrap them in a damp paper towel and microwave for 20-30 seconds, or warm individually in a skillet.
  4. Assemble the burritos:

    • Spread a layer of refried beans down the center of each tortilla.
    • Add a scoop of seasoned chicken.
    • Sprinkle with shredded cheese.
    • Top with a spoonful of cooked rice.
    • Add a generous dollop of guacamole.
    • Spoon on salsa.
    • Finish with a drizzle of sour cream or Greek yogurt.

  5. Wrap: Fold in the sides and tightly roll the burrito from the bottom up.
