For the Steak and Marinade
- 1½ lbs flank steak
- 3 tablespoons olive oil
- Juice of 1 lemon (about 2 tablespoons)
- 3 cloves garlic, minced
- 1 teaspoon dried oregano
- ¾ teaspoon salt
- ½ teaspoon black pepper
For the Rice Base
- 1 cup uncooked white or brown rice (or use quinoa as a substitute)
- 2 cups water or broth
- 2 tablespoons chopped fresh parsley
- Zest of 1 lemon
Bowl Additions
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- ½ red onion, thinly sliced
- ½ cup Kalamata olives, pitted and sliced
- ½ cup hummus
- ½ cup crumbled feta cheese
- Fresh parsley and lemon wedges for garnish
- Marinate the steak: In a small bowl, whisk together olive oil, lemon juice, garlic, oregano, salt, and pepper. Place the steak in a shallow dish or resealable bag and pour the marinade over it. Let it marinate in the refrigerator for at least 30 minutes, preferably up to 8 hours.
- Cook the rice: Rinse your rice, then combine with water or broth in a medium saucepan. Bring to a boil, reduce heat to low, cover, and simmer until liquid is absorbed (about 15–20 minutes). Once cooked, fluff with a fork and stir in lemon zest and fresh parsley.
- Grill the steak: Heat a grill or grill pan over medium-high heat. Remove steak from marinade and grill for 4–5 minutes per side for medium-rare, or adjust to your preferred doneness. Let rest for 5–10 minutes before slicing thinly against the grain.
- Assemble the bowls: Divide cooked rice between four bowls. Top each with sliced steak, cherry tomatoes, cucumber, red onion, olives, a scoop of hummus, and crumbled feta.
- Garnish and serve: Sprinkle with fresh parsley and add a lemon wedge for an extra burst of brightness. Serve warm or room temperature.
