  • 1½ tsp kosher salt
  • 1¼ cups unsweetened coconut milk
  • 1¼ cups mango purée
  • ½ cup diced fresh mango
  • ¼ cup fresh cilantro, chopped
  • Fresh lime wedges, for serving (optional)

Instructions

  1. Preheat oven: Preheat oven to 375°F (190°C) and lightly grease a baking dish.
  2. Sauté aromatics: Heat olive oil in a skillet. Cook onion until soft, then add garlic, ginger, cumin, coriander, chili powder, and salt. Cook 1 minute.
  3. Make sauce: Stir in coconut milk and mango purée. Simmer 2–3 minutes until slightly thickened.
  4. Assemble: Place chicken thighs in baking dish and pour sauce evenly over chicken.
  5. Bake covered: Cover with foil and bake for 20 minutes.
  6. Finish baking: Uncover and bake another 15–20 minutes until chicken is cooked through.
  7. Garnish & serve: Top with fresh mango, cilantro, and a squeeze of lime before serving.
