For the Lemon Rice:
- 1 cup long-grain white rice
- 2 cups chicken broth
- Zest and juice of 1 lemon
- 1 tablespoon olive oil
- Salt to taste
For the Tzatziki Sauce:
- 1 cup Greek yogurt
- ½ cucumber, grated and squeezed dry
- 1 garlic clove, minced
- 1 tablespoon lemon juice
- 1 tablespoon olive oil
- 1 tablespoon chopped fresh dill or mint
- Salt to taste
For the Cucumber Tomato Salad:
- 1 cup cherry tomatoes, halved
- 1 cucumber, chopped
- ¼ red onion, thinly sliced
- 1 tablespoon olive oil
- 1 tablespoon red wine vinegar
- Salt and pepper to taste
Optional Toppings:
- Crumbled feta cheese
- Kalamata olives
- Fresh parsley
- Warm pita wedges
Instructions
- Start with lemon rice as the base of your bowl.
- Add 3–4 lamb and beef meatballs to each bowl.
- Spoon over tzatziki sauce generously.
- Add a scoop of cucumber tomato salad to the side.
- Top with crumbled feta, olives, or herbs as desired.
