For the Lemon Rice:

  • 2 cups chicken broth
  • Zest and juice of 1 lemon
  • 1 tablespoon olive oil
  • Salt to taste

For the Tzatziki Sauce:

  • 1 cup Greek yogurt
  • ½ cucumber, grated and squeezed dry
  • 1 garlic clove, minced
  • 1 tablespoon lemon juice
  • 1 tablespoon olive oil
  • 1 tablespoon chopped fresh dill or mint
  • Salt to taste

For the Cucumber Tomato Salad:

  • 1 cup cherry tomatoes, halved
  • 1 cucumber, chopped
  • ¼ red onion, thinly sliced
  • 1 tablespoon olive oil
  • 1 tablespoon red wine vinegar
  • Salt and pepper to taste

Optional Toppings:

  • Crumbled feta cheese
  • Kalamata olives
  • Fresh parsley
  • Warm pita wedges

Instructions

  1. Start with lemon rice as the base of your bowl.
  2. Add 3–4 lamb and beef meatballs to each bowl.
  3. Spoon over tzatziki sauce generously.
  4. Add a scoop of cucumber tomato salad to the side.
  5. Top with crumbled feta, olives, or herbs as desired.
  6. Serve with warm pita wedges for scooping.
