  • ½ cup toffee bits

  • ¼ cup brown sugar
  • 2 tablespoons chopped toffee bits
  • 1 tablespoon mini chocolate chips

Instructions

Step 1: Preheat the oven

Preheat to 425°F (220°C). Line your muffin tin with paper liners or grease well.

Step 2: Mix dry ingredients

In a large bowl, whisk together flour, cocoa powder, instant coffee, baking powder, baking soda, and salt.

Step 3: Combine wet ingredients

In a separate bowl, whisk eggs, buttermilk, oil, sugars, and vanilla until smooth.

Step 4: Mix the batter

Add the wet ingredients to the dry ingredients. Stir just until combined—don’t overmix. Fold in chocolate chips and toffee bits.

Step 5: Portion into muffin cups

Fill muffin cups almost to the top (about ¾ full). Sprinkle the crunch topping evenly over each muffin.

Step 6: Bake

Bake at 425°F for 5 minutes. Then reduce the temperature to 350°F (175°C) and bake for another 15–17 minutes, or until a toothpick comes out with moist crumbs.

Step 7: Cool and serve

Let muffins cool in the pan for 5 minutes, then transfer to a wire rack to finish cooling.
