- 1/2 cup (100g) light brown sugar
- 4 large eggs
- 1 teaspoon vanilla extract
- 1 cup (125g) all-purpose flour
- 3/4 cup (65g) unsweetened cocoa powder
- 1/2 teaspoon salt
- 1/2 teaspoon baking powder

Instructions
- Roast the cherries:
Preheat your oven to 400°F (200°C). Spread the halved cherries on a parchment-lined baking sheet and sprinkle with 2 tablespoons of sugar. Roast for 20–25 minutes until soft and slightly caramelized. Set aside to cool. - Prepare the chocolate mixture:
Lower the oven temperature to 350°F (175°C). In a saucepan or microwave-safe bowl, melt the butter and semi-sweet chocolate together until smooth. Let it cool slightly. - Mix the wet ingredients:
In a large bowl, whisk together the granulated sugar, brown sugar, eggs, and vanilla. Pour in the cooled chocolate mixture and whisk until combined. - Sift and add dry ingredients:
Sift in flour, cocoa powder, salt, and baking powder. Stir until just combined. Do not overmix. - Fold in the roasted cherries and optional chocolate chips:
