Description

This Dairy Free Green Bean Casserole is a wholesome twist on the classic holiday favorite—rich, creamy, and completely free from dairy and gluten. Made with fresh green beans, a velvety almond milk sauce, and a crispy topping, it delivers all the cozy comfort of traditional casseroles without compromise. Perfect for allergy-friendly Thanksgiving menus or weeknight dinners!

Ingredients

Scale
  • 1 ½ pounds fresh green beans, trimmed and halved
  • 1 tablespoon olive oil or dairy free butter
  • 1 small yellow onion, finely chopped
  • 8 ounces mushrooms, sliced (optional)
  • 2 cloves garlic, minced
  • 2 tablespoons gluten free flour (rice or almond flour)
  • 1 cup unsweetened almond milk (or dairy free milk of choice)
  • ½ cup vegetable broth
  • Salt and pepper, to taste
  • 1 tablespoon nutritional yeast (optional, adds cheesy flavor)
  • 1 ½ cups gluten free crispy fried onions or crushed GF crackers

Instructions

  1. Preheat the Oven: Set oven to 375°F (190°C) and lightly grease a 9×13” casserole dish.
  2. Blanch the Green Beans: Boil green beans for 4–5 minutes, then transfer to ice water to stop cooking. Drain and set aside.
  3. Sauté Vegetables: Heat olive oil in a skillet over medium heat. Add onion and mushrooms; sauté for 6–8 minutes until softened. Stir in garlic and cook 1 minute.
  4. Make the Sauce: Sprinkle in gluten free flour and stir to coat veggies. Gradually whisk in almond milk and broth. Simmer 5–7 minutes until thickened.
  5. Combine and Assemble: Stir in nutritional yeast, salt, and pepper. Mix green beans with sauce in the casserole dish and top with gluten free onions or crackers.
  6. Bake: Bake uncovered for 25–30 minutes until golden and bubbly. Serve warm.

Notes

  • Use unsweetened, unflavored plant-based milk to avoid sweetness.
  • Blanching the beans ensures the perfect tender-crisp texture.
  • Add nutritional yeast for extra umami and cheesy flavor without dairy.
  • Make ahead: Prepare casserole (without topping) and refrigerate up to 24 hours before baking.
  • To freeze: Assemble and freeze before baking. Thaw overnight and bake as directed.
