- 1/4 cup brown sugar
- 2 tablespoons rice vinegar
- 1 tablespoon sesame oil

- 1 teaspoon grated fresh ginger (or 1/2 tsp ground ginger)
- 2 tablespoons cornstarch + 2 tablespoons water (for thickening)
- Sesame seeds and chopped green onions, for garnish

Instructions
- Prepare Chicken & Sauce: Add chicken to the Crockpot. In a bowl, whisk together soy sauce, honey, brown sugar, vinegar, sesame oil, garlic, and ginger.
- Cook: Pour sauce over chicken. Cover and cook on LOW for 4–5 hours or HIGH for 2.5–3 hours.
- Shred Chicken: Remove chicken and shred with two forks. Return it to the Crockpot.
- Thicken Sauce: Mix cornstarch and water, stir into Crockpot, and cook on HIGH for 15–20 minutes.
- Serve: Serve over rice and garnish with sesame seeds and green onions.
