Ingredients
Scale
- 2–2.5 pounds beef steak (chuck, sirloin, or tenderloin)
- 1 tablespoon olive oil (for browning)
- 1 large onion, sliced
- 3 cloves garlic, minced
- 1 cup beef broth
- 2 tablespoons Worcestershire sauce
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1 teaspoon paprika
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons cornstarch + 2 tablespoons water (optional, for thickening sauce)
Instructions
- Sear the meat (optional): Heat olive oil in a skillet over medium-high heat. Sear steaks for 2–3 minutes per side until browned.
- Layer ingredients: Place onions and garlic in the bottom of the crockpot, then lay steak on top.
- Add liquids & seasonings: Pour broth and Worcestershire sauce over steak, sprinkle with thyme, rosemary, paprika, salt, and pepper.
- Slow cook: Cover and cook on low for 6–8 hours or high for 3–4 hours, until steak is fork-tender.
- Thicken sauce (optional): Remove steak, whisk cornstarch slurry into liquid, and cook on high for 5 minutes.
- Serve: Plate steak with gravy and your favorite sides.
Notes
- Browning first enhances flavor and color.
- Best cuts: Chuck, sirloin, round, or tenderloin for slow cooking.
- Avoid lifting the lid — it adds extra cooking time.
- Flavor variations: Try BBQ sauce, Italian herbs, or garlic butter.
