Description

These Crockpot Fajitas are bursting with juicy chicken, tender peppers, and smoky seasoning — all cooked low and slow for an effortless family dinner. Perfect for busy weeknights, meal prep, or a build-your-own fajita bar, this recipe is healthy, budget-friendly, and full of flavor.

Ingredients

Scale
  • 23 boneless skinless chicken breasts (about 1.52 lbs)
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 medium onion, sliced
  • 1 tablespoon olive oil
  • 1 tablespoon chili powder
  • 1½ teaspoons ground cumin
  • 1 teaspoon smoked paprika
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ¼ teaspoon crushed red pepper flakes (optional)
  • ½ teaspoon salt
  • Juice of 1 lime
  • 8 small flour or corn tortillas
  • Optional toppings: shredded cheese, sour cream, avocado, salsa, cilantro

Instructions

  1. Prepare vegetables: Slice bell peppers and onion. Place them at the bottom of the slow cooker.
  2. Season chicken: Mix chili powder, cumin, smoked paprika, garlic powder, onion powder, red pepper flakes, and salt. Rub onto chicken breasts.
  3. Layer: Place seasoned chicken on top of the veggies. Drizzle with olive oil and lime juice.
  4. Cook: Cover and cook on LOW 5–6 hours or HIGH 3–4 hours, until chicken is fully cooked and tender.
  5. Shred: Remove chicken, shred with two forks, then return to the crockpot and stir.
  6. Serve: Spoon chicken and peppers into warm tortillas. Add your favorite toppings and enjoy!

Notes

  • Keep chicken whole while cooking for juicier meat — shred at the end.
  • Fresh lime juice brightens flavor right before serving.
  • For more spice, add jalapeños or extra red pepper flakes.
  • Vegetables release liquid, so no broth is needed.
  • Warm tortillas before serving for best texture.
