Description
If you’re craving something creamy, spicy, and packed with flavor—but don’t want to stand over the stove—this Crock Pot Creamy Cajun Chicken Pasta is exactly what you need.
Ingredients
- 1.5 lbs boneless skinless chicken breasts (or thighs), cut into chunks
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 3 cups chicken broth
- 1 tbsp Cajun seasoning (plus more to taste)
- ½ tsp garlic powder
- 1 small onion, diced
- 1 block (8 oz) cream cheese
- ½ cup heavy cream
- 12 oz penne or rotini pasta (cooked separately)
- Salt and pepper, to taste
- Fresh parsley or green onion, for garnish
Instructions
Step 1: Place chicken, bell peppers, onion, chicken broth, Cajun seasoning, and garlic powder in the slow cooker.
Step 2: Stir to combine and cover. Cook on LOW for 6 hours or HIGH for 3–4 hours, until the chicken is tender.
Step 3: About 30 minutes before serving, add cream cheese and heavy cream. Stir until melted and fully incorporated.
Step 4: While the sauce is finishing, cook pasta according to package instructions. Drain and set aside.
Step 5: Stir cooked pasta into the creamy Cajun sauce. Let it sit on warm for 10–15 minutes to absorb flavor.
Step 6: Garnish with fresh parsley or green onions. Serve hot.
Notes
- Use thighs for extra tenderness if you prefer dark meat.
- Don’t skip the cream cheese—it balances the heat with silky richness.
- Adjust the Cajun spice to taste; add more for extra heat.
