1 pound lean ground beef 1 medium onion, diced 2 carrots, diced 2 celery stalks, diced 3 cloves garlic, minced 4 medium potatoes, peeled and diced (or 1 (32 oz) bag frozen hashbrowns) 4 cups chicken broth 4 tablespoons butter 1/4 cup all-purpose flour 2 cups milk 2 cups shredded cheddar cheese 4 ounces cream cheese, cubed Salt and black pepper, to taste Cooked crumbled bacon, for garnish (optional) Fresh parsley or chives, for garnish


Instructions

1. In a skillet over medium heat, cook ground beef until browned and crumbled. Drain excess fat. 2. Transfer beef, onion, carrots, celery, garlic, and potatoes (or hashbrowns) to slow cooker. Pour in chicken broth, season with salt and pepper, and stir. 3. Cover and cook on low for 6–8 hours or high for 3–4 hours, until vegetables are tender. 4. In a saucepan, melt butter over medium heat. Whisk in flour to form a roux and cook 1 minute. Slowly whisk in milk until thickened. Stir in cream cheese until melted. 5. Add cream mixture and shredded cheddar to the slow cooker. Stir and cook on high for 15–20 minutes until cheese is melted and soup is creamy. 6. Ladle into bowls, garnish with bacon, herbs, and extra cheese if desired. Serve hot.

Notes

• Use freshly shredded cheese for best melting results. • Replace potatoes with frozen hashbrowns for convenience — check doneness after 5–6 hours. • For a thicker soup, mash a few of the potatoes before adding the cream base. • Use ground turkey, low-fat cheese, and skim milk for a lighter version.
