For the Peach Filling:
- 2 cups chopped peaches (fresh, frozen, or canned – see notes below)
- ¼ cup brown sugar
- 1 tsp ground cinnamon
- ½ tsp nutmeg
- 1 tbsp cornstarch (for thickening)
- 1 tsp vanilla extract
- Pinch of salt
- 1 tbsp butter
For Assembly:
- 10–12 egg roll wrappers
- 1 tbsp flour + 1 tbsp water (to seal the wrappers)
- Neutral oil for frying (like canola or vegetable)
Optional Additions:
- ½ cup cake mix (yellow or white) folded into the filling
- 2 tbsp cream cheese for a creamy twist
- Cinnamon sugar for dusting
- Powdered sugar or caramel drizzle for serving
Instructions
Step 1: Make the Peach Cobbler Filling
- In a saucepan over medium heat, melt the butter and add chopped peaches.
- Stir in brown sugar, cinnamon, nutmeg, vanilla, and a pinch of salt.
- Let the mixture simmer for 5–7 minutes, until peaches are soft.
- Dissolve cornstarch in 1 tbsp of water and stir it into the peaches to thicken.
- Cook another 1–2 minutes until glossy and thickened. Let cool slightly.
Optional: Stir in ½ cup of dry cake mix for extra cobbler texture and sweetness.
Step 2: Assemble the Egg Rolls
- Lay an egg roll wrapper on a clean surface, with one corner pointing toward you.
- Spoon 2–3 tablespoons of peach filling onto the center of the wrapper.
- Fold the bottom corner up over the filling, then fold in the sides.
- Roll it up tightly toward the top corner.
- Seal the edge with a dab of flour-and-water paste.
Repeat with remaining wrappers and filling.
Step 3: Fry or Air Fry
To Fry:
- Heat 2–3 inches of oil in a skillet or deep fryer to 350°F (175°C).
- Fry 2–3 egg rolls at a time for 2–3 minutes per side, or until golden brown.
- Drain on paper towels.
To Air Fry:
- Lightly spray egg rolls with oil.
- Air fry at 375°F (190°C) for 8–10 minutes, turning halfway through.
- Fry until golden and crisp.

- Air fry or oven bake at 350°F for 8–10 minutes
- Freeze uncooked or cooked egg rolls in a single layer
- Store cooled egg rolls in an airtight container in the fridge for up to 3 days
